I'm always happy to hear from another Tibetan food lover like myself!
Here are two more vegetable Momos Tibetan recipes.
Spinach and Cheese Momos:
For 30 momos for 2 to 4 people...
* 8 handfuls of spinach leaves
* 1.2 Kg of cottage cheese
* Salt, pepper, spices
Finely chop the spinach and mix with the cottage cheese. Add salt, pepper and any spices or herbs that you would like. Fill momos (and make the dough) as seen here:

You can also make half moon shapes or you can experiment!
Carrot and Cabbage Momos
* 600 grams tofu
* 1/3 head of cabbage
* 5 carrots
* 2 onions
* garlic
* ginger
Finely chop the carrots, onions and cabbage. Mix together with the crumbled tofu. Add salt, pepper, ginger and garlic to taste.
